
A coconut variation on my signature banana bread recipe
Do you have a signature recipe? Something that you can bake in your sleep? Or that people ask you to make all the time? Or just a recipe that you find yourself coming back to again and again and again?
I've always known what I considered to be my 'signature' recipe, so when I asked Edward what he thought it might be and he answered with the same one, I felt confirmed in my convictions. My signature recipe isn't particularly impressive. It's not fancy, it's not complicated and it's not much to look at. But it sure is tasty. And fast. And easy. It's this banana bread, which I blogged about a year ago.
I have passed this recipe on to many people over the years, and the feedback always comes back positive. I think that's because anyone can bake this successfully, non-bakers included. Six ingredients, a quick mixing, and this is ready for the oven before it's even finished preheating!
The pantry ingredients and five minute preparation time make this loaf the perfect family recipe, handy when you've got no time but everyone wants a sweet treat. It was by far the most-baked thing in our house when I was growing up, and 30 years later, my mum still bakes it regularly.
I bake it regularly now, too. Even when I do have time for something more complicated, sometimes I'd still rather eat this soft, moist, flavourful bread.
